WEEK 22 - Ricotta Cheese and Ravioli with Pesto
We made ricotta cheese using a gallon of whole milk and a quart of buttermilk, poured into a non-reactive stockpot and cooked until the temperature reaches 175.
Then we used the cheese to make this recipe:

We also made roasted tomatoes as well, filled with ricotta cheese.
