I miss my grandma's banana nut bread. But here's a recipe I found instead. I plan to add coconut and strawberries to it. Coconut because it sounds like a hawaiian thing to do (and is delicious in carrot cake!) and strawberries just cuz we have them.

WEEK 39: Carrot Patties

I'm on a carrot craze lately, and hamburgers are always good, so why not combine the two for a healthy AND tasty treat!

1 1/2 cups diced carrots
2 cups crushed cornflakes
2 eggs, beaten
1/4 cup finely chopped celery
1 tablespoon finely chopped onion
1/2 teaspoon salt
1/4 teaspoon sugar
1/8 teaspoon pepper
2 tablespoons vegetable oil
Hamburger buns

Directions

Place carrots in a saucepan with a small amount of water. Bring to a boil; reduce heat. Cover and cook for 5 minutes or until tender; drain. In a bowl, combine carrots, cornflakes, eggs, celery, onion, salt, sugar and pepper; mix well. Form into six patties. Heat oil in a skillet over medium heat; cook patties for 3 minutes on each side or until browned. Serve on buns if desired.

Week 38: Chicken Florentine and Carrot Cake

Chicken Florentine with Mixed Veggies and Popovers

Ingredients

4 skinless, boneless chicken breast halves
1/4 cup butter
3 teaspoons minced garlic
1 tablespoon lemon juice
1 (10.75 ounce) can condensed cream of mushroom soup
1 tablespoon Italian seasoning
1/2 cup half-and-half
1/2 cup grated Parmesan cheese
2 (13.5 ounce) cans spinach, drained
4 ounces fresh mushrooms, sliced
2/3 cup bacon bits
2 cups shredded mozzarella cheese

Directions

Preheat oven to 350 degrees F (175 degrees C). Place the chicken breast halves on a baking sheet; bake 20 to 30 minutes, until no longer pink and juices run clear. Remove from heat, and set aside.
Increase the oven temperature to 400 degrees F (200 degrees C).
Melt the butter in a medium saucepan over medium heat. Stirring constantly, mix in the garlic, lemon juice, cream of mushroom soup, Italian seasoning, half-and-half, and Parmesan cheese.
Arrange the spinach over the bottom of a 9x9 inch baking dish. Cover the spinach with the mushrooms. Pour half the mixture from the saucepan over the mushrooms. Arrange chicken breasts in the dish, and cover with the remaining sauce mixture. Sprinkle with bacon bits, and top with mozzarella cheese.
Bake 20 to 25 minutes in the 400 degrees F (200 degrees C) oven, until bubbly and lightly browned.

Ingredients

2 eggs
1 cup all-purpose flour
1 cup milk
1/2 teaspoon salt

Directions

Preheat oven to 450 degrees F (230 degrees C). Grease and flour six 6-ounce custard cups.
In a medium bowl beat eggs slightly, Beat in flour, milk and salt until just smooth; being careful not to overbeat. Fill custard cups 1/2 full.
Bake at 450 degrees F (230 degrees C) for 20 minutes. Decrease oven temperature to 350 degrees F (175 degrees C) and bake for 20 minutes more. Immediately remove from cups and serve piping hot.

3/4 cup buttermilk
3/4 cup vegetable oil
1 1/2 cups white sugar
2 teaspoons vanilla extract
2 teaspoons ground cinnamon
1/4 teaspoon salt
2 cups all-purpose flour
2 teaspoons baking soda
2 cups shredded carrots
1 cup flaked coconut
1 cup chopped walnuts
1 (8 ounce) can crushed pineapple with juice
1 cup raisins

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour an 8x12 inch pan.
In a medium bowl, sift together flour, baking soda, salt and cinnamon. Set aside.
In a large bowl, combine eggs, buttermilk, oil, sugar and vanilla. Mix well. Add flour mixture and mix well.
In a medium bowl, combine shredded carrots, coconut, walnuts, pineapple and raisins.
Using a large wooden spoon or a very heavy whisk, add carrot mixture to batter and fold in well.
Pour into prepared 8x12 inch pan, and bake at 350 degrees F (175 degrees C) for 1 hour. Check with toothpick.
Allow to cool for at least 20 minutes before serving.

WEEK 32 and 33: Fig Newtons and Pineapple Ice Cream

A friend of mine at work has a fig tree and hates figs, so he finally got wise and decided to give them to people instead of letting them go uneaten. He told me he likes fig newtons, so I told him to bring in some fresh figs and I'll make him the figgy cookies!

WEEK 30 - Stuffed Patty Pan Squash

Serves: 4
Ingredients:

* 4 pattypan squash
* 2 tablespoons butter
* 2 tablespoons flour
* 1/8 teaspoon kosher salt
* 1 pinch fresh ground pepper
* 1 cup milk
* 1 cup shredded cheddar cheese or 1 cup monterey jack cheese
* 6 saltine crackers, crushed

Directions:

Prep Time: 10 mins

Total Time: 35 mins

1. 1 Preheat oven to 350 degrees.
2. 2 Place pattipans in boiling water and cook until tender, about 10 minutes. Drain and set aside.
3. 3 Make white sauce with butter, flour, salt and milk. (On medium heat, melt butter, stir in flour and brown slightly, add salt, then add milk a little at a time, stirring constantly. (I usually use a about a third more milk than written above.) Once all milk is added, continue to cook and stir for a minute or two.
4. 4 Turn off heat, add cheese and crushed saltines to white sauce and stir.
5. 5 Scoop out the middle of each pattipan to make little "bowls". (I use my grapefruit knife.) Turn the pattipans over on a plate (so the juices drain out) and set aside.
6. 6 Add scooped out portion of squash to sauce and mash with a potato masher. Taste sauce and adjust seasonings as needed.
7. 7 Fill squash with the sauce, pouring the excess over the top.
8. 8 Bake for about 15 minutes, or until done.
9. 9 Note: If using table salt, use only a pinch rather than 1/8 t.
