WEEK 30 - Stuffed Patty Pan Squash

Serves: 4
Ingredients:

* 4 pattypan squash
* 2 tablespoons butter
* 2 tablespoons flour
* 1/8 teaspoon kosher salt
* 1 pinch fresh ground pepper
* 1 cup milk
* 1 cup shredded cheddar cheese or 1 cup monterey jack cheese
* 6 saltine crackers, crushed

Directions:

Prep Time: 10 mins

Total Time: 35 mins

1. 1 Preheat oven to 350 degrees.
2. 2 Place pattipans in boiling water and cook until tender, about 10 minutes. Drain and set aside.
3. 3 Make white sauce with butter, flour, salt and milk. (On medium heat, melt butter, stir in flour and brown slightly, add salt, then add milk a little at a time, stirring constantly. (I usually use a about a third more milk than written above.) Once all milk is added, continue to cook and stir for a minute or two.
4. 4 Turn off heat, add cheese and crushed saltines to white sauce and stir.
5. 5 Scoop out the middle of each pattipan to make little "bowls". (I use my grapefruit knife.) Turn the pattipans over on a plate (so the juices drain out) and set aside.
6. 6 Add scooped out portion of squash to sauce and mash with a potato masher. Taste sauce and adjust seasonings as needed.
7. 7 Fill squash with the sauce, pouring the excess over the top.
8. 8 Bake for about 15 minutes, or until done.
9. 9 Note: If using table salt, use only a pinch rather than 1/8 t.

MOR: Spicy Fries with Guacamole



Some of my specialty dishes I make quite frequently, so I don't require a recipe.

But I'll share with you my recipe for both fries and guacamole because people have been asking for it. And in most cases, if you ask from me, you shall receive.

(Eat together or separate)


* Homemade Spicy French Fries*
Ingredients:
- 4 potatoes, sliced to smaller cut or size you like
- 6 tbs oil (peanut oil is best, but I use olive or veggie/canola)
- salt, pepper, crushed red pepper flakes

Directions:
Slice the potatoes to smaller cut, like McDonald's size fries. Place cut potatoes in a glass bowl with water covering the tops. Refrigerate over night.

When ready, take out the fries and pour the oil in a small saucepan (or, if you're fancy, a deep fryer.) Heat the oil on med-high heat and place potatoes so they line the pan.

Fry for about 10-15 minutes (different oils heat differently) or until golden brown.

Place golden-brown fries on a paper towel-lined plate and soak up the oil. Sprinkle ground salt, fresh ground black pepper, and crushed red pepper on top. Toss to coat.

Enjoy.


* Homemade Guacamole *
Ingredients:
- 2 ripe avocados, cut
- 1 tomato
- 1/2 large onion (I prefer red)
- 2 limes, squeezed
- 1/2 lemon, squeezed
- 1/4 c. cilantro, chopped
- salt and pepper to taste

Directions:
In a large bowl, spoon out the avocados and leave the pits (this and lemon/lime helps preserve the freshness of the avocado.) Mix the remaining ingredients together and stir till the consistency is chunky but creamy. Sprinkle on salt and pepper to taste. I tend to use twice as much pepper as salt, but that's just me.

Enjoy with your favorite tortilla chips or sprinkle on top of your favorite Mexican food.


Guacamole Sushi Roll

As an experiment, I made a guacamole roll. I love avocado rolls and make them all the time, but this was very tasty too.

REVIEW on WEEK 28

Monday
- meeting with Dan - Stephen King script adaptations

Tuesday

- cookoff - INGREDIENTS: potato, hot dog, and egg (I know, very breakfast sounding)

I made a potato skin/baked potato with cheese and hot dog, and sprinkled cheese around it.

Then I made a fried pasta which is a lot like my fried rice, minus the rice and I added some red wine and Italian herbs and spices.

For dessert I put cheerios on the bottom, then layered on yogurt, then berries, and fried tortilla w/ cinnamon (taught myself how to make crunchy churros.)

Patrick made something that looked good, but was probably the worst=tasting thing ever. ;P

- had lunch at the wein (food truck) across the street. I got the Stray Dog, which had bacon, cotija cheese, jalapeno, and onions. Yummy!

WEEK 28: MOR: The Chopped Chef Challenge

Since we have a lot of groceries left in the fridge, we decided to not spend even more money and shop this week. We'll use ONLY WHAT'S IN THE KITCHEN to cook our meal this week.

Here's the challenge -
Dinner using these ingredients:
- Potato
- Egg
- Hot Dog

Desert using these ingredients:
- Lemonade
- Corn tortilla

I really hope these meals turn out good, at least edible and decent. I'm hoping we can create something amazing and something to be proud of. We'll see.

- DINNER: Smoked salmon cream cheese dip and fried squash blossoms
(Here are step by step photos of how to make fried squash blossoms:)

Buy squash blossoms from the farmer's market or the grocery store

Stuff the squash blossom with cheese

Twist to seal in the stuffing

Repeat steps with all blossoms and place in a pan

Fry them in oil (two at a time)

VOILA! All done and ready to eat!
