Chipotle (Mexican) Lasagna
Ingredients:
9 lasagna noodles
1 lb. (4 links) hot Italian sausage
1 red onion, chopped
3 cloves garlic, minced
1 red bell pepper, chopped
2 cups eggplant, chopped
2 cups carrots, dices
1 jar of marinara sauce (I used Kirkland 32 oz.)
4 chipotle chile in adobo sauce, chopped
Italian seasoning, to taste
Crushed red pepper, to taste
2 cups grated mozzarella
1 cup grated pepper jack
While the lasagna noodles are cooking, cut up all the veggies. Bring 5 quarts water to boil in a large stockpot. Cook lasagna noodles according to package instructions. Drain. Let cool and lay aside on a flat surface.
In the same stockpot, brown 4 hot Italian sausage links. (I cut them up with met scissors.) Add onions, garlic, bell pepper, eggplant, and carrots. Let cook 5 mins. Add the marinara sauce and chipotle peppers. Stir. Add Italian seasoning and crushed red pepper to taste.
Preheat oven to 350 degrees.
Line bottom of 9x13 glass baking dish with the sauce. Place 3 lasagna noodles. Sprinkle 1/3 cheese. Repeat 2 more times, covering the top with the remaining cheeses.
Place in oven and bake for 60 minutes.
Let cool before serving.
